Lumpia...

When I was younger, my mom used to make Lumpia all the time! It was delish and I haven't had it in such a long time. So I decided to make it yesterday. Here is the recipe!

 
3 pkg. Lumpia skins, separated {egg roll wraps work too.}
2 lbs. ground beef
1 lg. onion, chopped
2 cloves garlic, chopped
1 pkg. cole slaw mix
1 can water chestnuts, chopped
1/4 c. water
1 tbsp. cooking oil
1/2 c. soy sauce
2 eggs, beaten
1 tsp. pepper
3 c. white rice {i use minute rice}

- In a skillet, brown beef, drain, set aside.

- Heat cooking oil. Add garlic, brown lightly. Add chopped onion, stir 2 minutes.
- Add water and water chestnuts. Mix all together for 10 minutes.

- Add beef, soy sauce, pepper, and cole slaw mix. Mix and cook for 7 minutes. 
- Add white rice and eggs, mix.

- Put 1-2 tblsp of mixture in lumpia skins.



- Seal edges of skin by brushing water on edge of skin.

- Deep fry 3-4 at a time and serve hot with sweet and sour sauce.


- Makes 60.

These were absolutely delish!! I decided to pan fry some of them since it was taking forever to deep fry them..
