First Game of the Season!!

Yesterday was Opening Day for Little League!! Everyone was freezing since it was like 40 degrees w/ a windchill.. So all three kids have fevers now..

Anyways,
DJ's team the Giants, played the Dodgers.. {how fitting, right?} Dave was making smart ass comments when he would call, since he was working. {not going to post them here} My dad also came and video taped the whole game!

There is this one little boy on their team that throws tantrums when he doesn't get to catch the ball.. Drives me crazy! He will also run after the ball instead of running to the bases.. {he does the same thing at our practices too} So my dad said that he was having more fun video taping his tantrums than the game.. I told him to knock it off.. haha

So the deal with Tee Ball is,
- Tee Ball is 2 endings.
- Each player gets to bat.
- When you are up to bat, you hit the ball then run to first and Stop.
- You stop at each base.
- When the last player bats, all 4 players run home.. {home run!!}
- Score is not kept.
- There are no outs, strikeouts, stealing or bunting..

So are you guys ready for an overload of cuteness?!?!
{Warming Up}
{Everyone ran to the ball.. }
{Waiting for the ball to be hit..}
{Surprisingly, DJ is the 2nd shortest player on the team.. lol He is in the middle}
{Just standing around.. Him and J chatted while they were switching batters..}
{I love the way he stands.. His left hand out with his mitt ready to catch the ball and his right hand covering himself.. hahaha}
{Everyone running for the ball.. again}
{DJ up to bat.. I am one proud mama!}
{Hits the ball pretty far!! If you look at the right side of the picture, you can see the white circle.. That's the ball..}
{RUN DJ RUN!!!!!!}
{My little Sprinter!! He is super fast!!}
{Safe at 1st!}

And here is the video of DJ hitting the ball!! I would turn your volume down since I am yelling and it is shot with my phone..}

Hope you all have a fabulous weekend!!!!

Apple Pie Apples...

I was on a cooking kick yesterday and also made some Apple Pie Apples! They were so yummy!! Here is the recipe!

- 5 Granny Smith Apples
- 1 teaspoon Ground Cinnamon
- 1/3 c Sugar
- 2 tablespoon Brown Sugar
- Pie Crust {premade or homemade will work. I chose premade.}

 - Cut off the top of 5 apples off and discard. Remove the inside of each apple with a spoon or melon baller very carefully, as to not puncture the peel.
- Mix sliced apples with sugars and cinnamon in a bowl. If you prefer more or less cinnamon make adjustments as desired. Same goes for the sugar.
 - Have your adorable helper scoop sliced apples into hollow apples.

 - Cover the tops in whatever pattern/shapes you want!
- Place apples in an 8×8 pan. Add just enough water to the cover the bottom of the pan.
- Cover with foil and bake for 20-25 minutes. {I used my Demarle round mold and my octagon silpat top instead of the foil and pan.}

- Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.
- Mine didn't turn out so great... lol I think I hollowed them out too thin.. oh well, they were still pretty tasty!!

 They tasted fabulous with some vanilla ice cream! If you make them, let me know how yours turn out!!

Happy Monday!!!

Lumpia...

When I was younger, my mom used to make Lumpia all the time! It was delish and I haven't had it in such a long time. So I decided to make it yesterday. Here is the recipe!

3 pkg. Lumpia skins, separated {egg roll wraps work too.}
2 lbs. ground beef
1 lg. onion, chopped
2 cloves garlic, chopped
1 pkg. cole slaw mix
1 can water chestnuts, chopped
1/4 c. water
1 tbsp. cooking oil
1/2 c. soy sauce
2 eggs, beaten
1 tsp. pepper
3 c. white rice {i use minute rice}

- In a skillet, brown beef, drain, set aside.

- Heat cooking oil. Add garlic, brown lightly. Add chopped onion, stir 2 minutes.
- Add water and water chestnuts. Mix all together for 10 minutes.

- Add beef, soy sauce, pepper, and cole slaw mix. Mix and cook for 7 minutes.
- Add white rice and eggs, mix.

- Put 1-2 tblsp of mixture in lumpia skins.

- Seal edges of skin by brushing water on edge of skin.

- Deep fry 3-4 at a time and serve hot with sweet and sour sauce.

- Makes 60.

These were absolutely delish!! I decided to pan fry some of them since it was taking forever to deep fry them..

 Enjoy!!!

Tee Ball Time!!

Talk about a lame blogger...

Things have been crazy busy this past week and I am so glad the weekend is here!

Yesterday was DJ's Tee Ball Picture Day. He was too funny when it came to his pictures. He would make the goofiest faces for his pictures, but I cant get mad, that is how DJ is :) Great memories! When we got to the park, he couldn't wait to get his shirt, socks and hat. When it came time to change his shirt, he got so embarrassed.. haha I had to fight him to swap shirts.

He played with some of his "tee ball player friends" and were so excited to play!

so excited to be in his tee ball uniform...

mom, I'm ready. can i go play tee ball now?

the team.. of course DJ has to be front and center with his goofy smiles.

love this little guy...

yes, that is the face...

Opening Day is next Saturday!!!

I am debating between gymnastics and ballet for Miss. Reagan. My dad is pushing for mma/kick boxing lol.. He said that she has 2 brothers and needs to defend herself.. So he does have a point. She is just so petite and girly, I just cant see it...

My Scentsy business is booming! Today has been one month with Scentsy and I am almost to my personal goal and I have 2 recruits! I love love love the spring & summer catalog! I can't wait to see what this month brings me!! Plus my recruits are doing amazing too!! If you are in need of some new scentsy or just want to shop around, don't hesitate to stop by here! There are some beautiful new warmers and the layers are pretty amazing too!

I hope you all have a fabulous Sunday!!
