Kugele.. Dave's Lithuanian Dish!

The whole process will take about 3-4 hours.

What you will need:
1 pound bacon, diced
1 large onions, diced (we use 1/2 onion because I dont like them)
1/2 -2/3 of a 16oz tub of Sour Cream
5 pounds russet potatoes, peeled and shredded (do not use Idaho Potatoes, they dont give out enough starch)
1 (12 fluid ounce) can evaporated milk

1. Peel and Shred Potatoes (this takes the longest) Its okay if the potatoes start to turn brown/red.


2. After potatoes are grated, you need to seperate the juices and the potato mix. Put everything in a cloth towel and drain into another bowl. Dont take all of the juices, take about 90% of it.

3. You will then start sauteeing the onions and bacon. only cook the bacon 3/4 of the way because they will cook the rest of the way in the oven.

4. Your potato mixture should look almost like dough. Then mix your evap milk and sour cream.

5. You are going to want to pour the juice out of the bowl so you can get the potato starch (the white stuff at the bottom) and mix all of the starch with the potato mix.

6. Finally mix in the onions and bacon. Mix really well and then put in a casserole dish.
7. Bake for 2hrs at 350 degrees. Chech at about 1 1/2 hours in to make sure its not burning or over cooked.

8. Let cool for about 15 minutes and then dig in!!! I love sour cream with mine but you can put butter or have it plain!!
